Almond Biscotti:

(makes about 28 biscotti)

145 grams blanched whole almonds toasted and chopped
1 teaspoon baking powder
a good pinch of salt
250 grams plain flour
150 grams granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 teaspoon pure almond extract

Preheat oven to 150 ° C and line a baking sheet with parchment paper.
Beat the eggs and extracts together and set aside.

The design for this island unit came easily – it’s utensil drawers on one side, shallow, easy-access cupboard on the other. The top is a preparation area which doubles as a breakfast bar and in this square kitchen, it needed soft curved edges. But what material was it to be?. The main worktops are Corian; we did not feel granite was right; and glass wasn’t cosy enough. The solution here is a solid walnut work surface which will mellow and age with those around it!…   [Read More]
